Wilma's Lemon Squares come to us via Jackie as we don't know Wilma

This easy recipe is shortcake underneath and lovely light lemon-curd-like mixture on top, with a sugary crunch.  So so easy, but unbelievably delicious.

For the base:
1/2 cup or 4oz softened butter
1/4 cup or 2 oz sugar
1 cup or 5 oz plain flour

Mix and pat into 8 x 8 inch greased and lightly floured tin.
Bake for 15 minutes at 350/180 (fan 170)/gas mark 4

For the topping:
2 tablespoons plain flour
1/2 teaspoon baking powder
1 cup sugar (8 oz)
2 eggs lightly beaten
Grated rind of a lemon
3 tablespoons lemon juice

Mix well and spread on crust.
Bake for 30 minutes.

Cool and cut into squares.
You might want to lock the tin away from the family, or it will be empty in 5 minutes.
